Pork Chops and Gravy

- 4 thick center cut pork chops
- 1 medium onion, sliced
- 1 can chicken stock
- 1/2 teaspoon fresh lemon juice
- 2 to 3 tablespoons oil
- thicking agent, cornstarch or flour
- salt and ground black pepper
Add 2 to 3 tablespoons oil to hot pan. Heat oil.
Salt and pepper both sides of chops. Place in pan and brown about five minutes, flip and brown other side about five minutes longer. Remove browned chops, set aside.
Add sliced onions to pan, stir and cook till lightly browned,add chicken broth and lemon juice. Stir till all bits are mixed in gravy.
Add pork chops,put on lid. Lower heat so food simmers. Continue cooking about 30 minutes longer. Pork chops should be tender.
Making Gravy
In a cup put 2 tablespoons cornstarch or 3 tablespoons flour. Add about 1/4 cold water and stir. If not liquid add more water. This becomes the thicking agent.
Remove chops set aside. Turn heat to medium high bringing juices to a boil. Slowly pour in thickener while stirring juices. It should begin to thicken imediately. Keep stirring to avoid lumpy gravy. Turn down heat. Adjust seasonings. If not enough taste add a gravy seasoner like Kitchen Bouquet or a tablespoon of onion soup mix. Add chops to gravy. Simmer several minutes. Serve
Great with mashed potatoes. Easy to cook in an electric skillet.
