Basic Tomato Sauce

- salt and pepper to taste
- 1/4 cup grated locotelli cheese
- Crushed Tomatoes (28oz.)
- 1/3 cup olive oil
- 1 medium onion chopped
- 6 large cloves garlic chopped
- 1 teaspoon crushed red pepper
- 1 teaspoon salt
- 1 medium bay leaf
- 1 teaspoon dried basil or 6 or 8 fresh basil leaves
- 1 tablespoon sugar
In large sauce pan heat olive oil over medium heat for about 1 mim.
Add onions and sautee for about 2 mins stirring occasionally.
Add garlic,red pepper,and salt. Sautee for an additional 2 minutes,mixture should look translucent.
Add the 4 cans of tomatoes,bay leaf, basil,and sugar. Use high heat stirring often to prevent sticking to bottom. When sauce begins to boil reduce heat to a slow simmer.
Stir occasionally,after 30 minutes of simmering taste it,add salt and pepper as needed. Add the locotelli cheese at this time.
Sauce is cooked when oil floats to top. Appox.30 minutes
This is enough sauce for 2 meals serving 1 pound of pasta each time.
You can freeze left over sauce to use
later.
Makes about 3 quarts Can become a meat sauce, or meatballs and spagetti or the sauce for lasagna
